For years I was a faithful Kashi Go Lean cereal eater. This week I decided to try something new–something with fewer ingredients and less fiber–for the most important meal of the day, and I am pleased with the switch.
I don’t know who stumbled upon or coined the term “Overnight Oats,” but they must be brilliant. I love oatmeal, but I never want to take the time to make it in the morning–we don’t have a microwave, and who wants to dirty a pot on a weekday before they’ve had coffee? Not this girl. Enter overnight oats. Put the ingredients in a bowl before you go to bed, and it’s ready when you wake up.
In my bowl this week: 1/2 c oats (not instant), 1/2 c + splash soy milk, frozen blueberries, sprinkle of cinnamon, pinch of salt. In the morning I stir in a spoonful of peanut butter. And, of course, coffee with soy milk to wash it all down.
It’s easy, delicious, and keeps me full for hours! I think I’m in love.

I haven’t tried this exact recipe – but the whole overnight thing is AMAZING. So easy to eat someone substantial and healthy. Love it. I’ll have to give your recipe a go!

I LOVE overnight Oats! I’ve been eating them for months now! You can play around with the flavors and it’s so easy to just grab your oats in the morning, glad you’ve found them now too!

So you eat it cold?? I guess I thought you heated it up the next day! I used to love Kashi Go Lean Crunch – loved when I got to the bottom of the bag and then I would take a banana, smear it with a bit of peanut butter and roll it in the tiny bits from the bottom of the bag – sweet, salty, crunchy – the perfect snack!
Haha, I do eat it cold! I guess you heat them up though if you wanted!
Still haven’t tried the overnight oats thing but I’m going to have to after reading about it so much and the following rave reviews! My go-to breakfast is a smoothie and then a bit later some fruit with a wholemeal muffin with peanut butter (plus an egg if I’m feeling in a protein mood 🙂 )… definitely have to do prep work for it though, so loving the sound of this easy recipe!
